This charming restaurant, where one can eat outside under the cool shade of trees, in what was once the village school, is well worth visiting again and again. Mylène and Christophe, have created a distinctive ambience, where food is both pleasure and art. I was particularly impressed by a cold mussel based gazpacho soup, which soothed the heat of the cicadas panting in the summer's heat

Directions: From Carcassonne, take the D 610 (via Trebes and Puicheric). After 33 kms take a left at the village of Homps, on the D 910 through the town of Olonzac. Through Olonzac, continue on the D910 for 3 kms to the village of Beaufort. The restaurant is on the left hand side of the road, in front of the church
